Dinner for one……

While Geoff, Lana and Emily were tucking into the fish pie I had left for their dinner

I was making a quick and easy dinner for myself.teeth 008

Half a butternut squash and scoop out the pips.

Wrap in tin foil then bake in the oven till soft.

While its baking make some Bachelors savoury rice or  spicy couscous.

Pile the rice into the hole left from removing the pips.

Hey presto one delicious looking and tasting low fat dinner.

Great served with some green vegetables  like broccoli.

Winter warmer…

My youngest Son works at Morrisons after college, and gets home late.

He’s always hungry when he gets home but the last thing I want to do at 10pm is cook.

So I have got into the routine of making soup when he is working. n95

Tonight I have made Broccoli and Potato Soup a really nice and quick soup to make.

Ready to eat in about 30 min’s.

You simmer some chopped potatoes in vegetable stock along with some onions and garlic.

Once the potatoes are cooked you add the broccoli and simmer till that’s tender.

Then you blend till smooth.

Do not be put off by the colour as its really delicious  and very low fat too 🙂

1. As a baby I had a huge strawberry Nevis birthmark in the middle of my forehead.

2. I left home at 17 to join the air force.

3. I have been unable to read a book for over a year, many half started but none finished for some reason I am unable to concentrate.

4. I never watch T.V for the same reason.

5. At school I took an exam in Motor vehicle technology.

6. I hate using telephones so I am not good at keeping in touch with people who don’t text or e-mail.

I found this very hard to do but would not like to disappoint Anne.

Back to College….

Do you know the difference between the Maxilla and the Zygomatic ??

I had to learn the facial bones for a test at college tonight.

There are seven altogetherhead

  • frontal bone
  • mandible
  • maxilla
  • occipital bone
  • parietal bone
  • temporal bone
  • zygomatic bone

We also had to know the name of the collar bone,the shoulder blade and the neck bones.( Clavicle,Scapula and Cervical Vertebrae )

Next we have to learn some of the facial muscles, which will be harder due to the strange names like Orbicularis oris.

For the third week in a row I fell asleep while having my Indian head massage, its very annoying as I really want to know what it feels like to have your face massaged and I feel nothing while a sleep 🙁

Lady in Red…

We had a posh frock party to go to at the week-end.

Most of you will know I have never really been a dress kind of girl always happier in my walking kit .

Geoff informed me he had found a great dress for me and it was RED.

Saturday morning off we went to look at it, I was convinced it would never fit me  let alone look good on me.

I am now eating humble pie…. not only was the dress fantastic , it fitted perfect and I felt like a princess in it.

The shop assistant made a real fuss over me making me feel even more glamorous.

Geoff treated me to the dress,( which overwhelmed me ) and I showed  it off to everyone I could during the day.

needless to say I had a great night, I think everyone was amazed at me in a dress and I really felt like a princess all night.

I can hardly wait to wear it again and I think Geoff can now be my personal dresser as he has such good taste.

Will have to share the photos with you as I cannot believe its me…….

Lemon Cake…

A a new cake recipe that I wanted to make for Geoff.

I had to abandon my first attempt at making it when my son called for a lift home from work as he had bike trouble.

So I rushed home from work on Friday to bake it before I left for Cambridge.

It was well worth the effort the cake was delicious, very moist and lemony.

Geoff loved it and he over spoilt me all weekend ( more about that later ) 🙂

If you make this cake for your husband/boyfriend/partner, I am sure you will get spoilt too 🙂

And the recipe is below……

115g self raising flourn95 019

1tsp baking powder

2 eggs

115g caster sugar

65ml double cream

lemon juice ( to taste)

45g melted butter.

oven temp 170/gas mark 3

Sift flour and baking powder together.

lightly beat eggs with the sugar, then beat cream into egg mixture for a minute.

add lemon juice.

Fold in the flour then gently fold in the melted butter.

Pour into loaf tin and bake for 45 minutes.

When cake is completely cold make the icing by mixing 30g of icing sugar with 1 tsp of lemon juice then drizzle over top of cake.

Another group walk….

Today we met up with the Southern Norfolk Group Ramblers for a 13 mile ramble from Santon Downham.santon downham 004

It was nice to see some familiar faces and catch up with all the news.

Amazingly it was Paul’s 61st time at leading a walk and 20 other walkers turned out to join him.

We had much better weather this week and the colours through the woods were often beautiful.

My feet did not get so wet this week but my boots are causing me a great deal of concern, you expect an expensive pair of santon downham 005boots to last longer than 9 months.

The boots were also a replacement to another faulty pair, of the same make.

Never did I expect the new pair to get the same fault.

An E-mail to Asolo is the next step.
