Cup Cakes

Decided to have a change from making my usual Muffins.

So experimented last night with a plain Cup Cake recipe that had a cream cheese topping

I filled the topping with chocolate drops too.

They were such a hit that none made it to Cambridge 🙁

It was funny that Matthew should like the cake stand, ssoo much, I was not allowed to store the cakes away.

The cake tins are here with me in Cambridge and hopefully I shall make some more today 🙂

I really should buy another set of tins then its another thing I wont have to carry back and forth along the A10

Walking round Oxborough

Today I went off to Oxborough to meet my friend T

She had to recce a walk she is doing later in the year for the Newmarket Ramblers

Even though Oxborough is only a 30 min drive from here I had not been over that side of Norfolk since leaving Marham 5 years ago.

I had totally forgotten how lovely it is, small single track country lanes, quaint villages and lots of churches.

T was glad I had my GPS , the walk is in the program as 10 miles when in fact it was just over 12 🙂

I was well impressed with her leading skills as we never got lost once not even with all the chatting.

Its amazing just how quick 12 miles go when your chatting too.

We finished the day in the local pub, Bedingfeld Arms with tea and carrot cake where we chatted away for another Half an hour or so before dragging ourselves home.

I was so taken by today’s walk that I came home and ordered the book it was partly taken from, as I want to take Geoff over that way and see if I can lead him on a walk for a change.

Growing

Well my knitting is slowly growing.

The toe is now finished and the foot is next.

Then it’s the heel

Only one person guessed that it’s socks that I am knitting

An away day

Yesterday the Cambridge Rambling club had there summer coach trip.

So at 8.30am I found myself on a coach heading to Sheringham

Yes I know that is nearer to my own house in Norfolk.

Its more fun though to go on a coach with your friends 🙂

After 14 enjoyable hot and dusty miles was walked.

We rewarded ourselves with some of Dave’s fish and chips before getting the coach home.

Arriving back in Cambridge around 8pm , that’s what you call a day out 🙂

A fresh new look

Not sure if anyone noticed but my blog has been updated 🙂

In fairness nothing much has changed, but there are one or two new features that I like.

One of the new features is being able to have a separate blog header for each post.

Finally today I managed to get it to work, so if you click on the Rhubarb Jam post the header becomes Rhubarb.

Another feature that I like is being able to have a back ground picture, at the moment its one of my Race for life Pics.

Simple things please simple minds 🙂

Rhubarb and Ginger jam

On Tuesday as I was leaving work I noticed that all the Rhubarb had been reduced.

As Geoff loves Rhubarb I knew I just had to buy some.

I love making Jam so I decided I would try some Rhubarb and ginger jam.

It was the easiest Jam I have ever made 🙂

2 1/2 pounds of Rhubarb chopped

2 1/2 pound of sugar

juice from 2 lemons

1 oz of root ginger

4 oz preserved ginger

Place the rhubarb in a large bowl in alternate layers with the sugar and lemon juice.

cover and leave over night.

next day bruise the ginger and tie it in a piece of muslin.

put the muslin bag into the rhubarb mixture and bring to the boil.

Boil for 15 mins, remove the muslin bag, add the preserved ginger and boil for a further 15 mins or untill a setting point is reached.

Another fantastic jam 🙂

Lets just hope there is some left for Geoff when he returns home 🙂

Race for Life 2010

A huge huge Thank you to all the lovely kind generous people that sponsored me.

Some who I know and a few who I don’t 🙂 but because of you all

I managed to Raise just over £200 🙂

It was an amazing event with over 8000 women and girls of all ages taking part.

Some ran,some jogged and some walked but we all did it together to raise money for cancer research.

It was a new route this year that started from Parkers piece and took us through the town centre along Kings College through the backs then up the river to Jesus Green.

A fantastic route and one which I hope they keep 🙂

I had set myself a challenge which I thought I was not going to be able to achieve but its amazing what you can do when you try 🙂

I pushed myself hard, right out my comfort zone and ran it in 28.08 🙂

An amazing day and it was so good to have Geoff there, who had delayed his flight to France so he could stay and take some photos.
