Fresh from my Garden

My first crop of Blueberries picked yesterday and made into Blueberry Muffins 🙂

The recipe for the Blueberry muffins is from my favourite book Fast and Fantastic Muffins by Susan Reimer.

10oz Plain flour
3 teasp baking powder
5oz white sugar
1 Egg
9fl oz milk
3fl oz corn oil
6oz of berries.

In a large bowl sift flour and baking powder then stir in the sugar.
In another bowl beat egg then stir in milk and oil
Pour all wet ingredients into dry and stir until combined.
Gently fold in berries using 3 to 4 strokes.

Bake for 20 to 25 mins at 190

The recipe for the delish slimming world chips.

Peel potatoes and cut into chunky chips, I cut mine into wedges.

switch oven on at 200c spray the bottom of a non stick tray with oil.

Par boil potatoes for aprox 5 min’s and have tray warming in oven at same time.

Drain potatoes and shake them in a colander to rough up.

Add to hot tray, spray with oil ,sprinkle with salt.

Then bake for aprox 45 min’s depending on how brown you like your chips.

During the 45 min’s give them a shake or two and another spray of oil.

Supper for two….

With Geoff going off on his travels soon, I am making the most of the next few weekends while I still have someone to cook for.

I have a few recipes I want to try before he goes.cup 007

This weekend it was a Sea bass recipe.

Baked in the oven with fennel, leeks, red pepper, lemon and dill.

All wrapped in foil with some wine then baked for about half an hour.

Served with the best baby potatoes and green beans.

It really was delish.

I used Sea bass fillets but whole Sea bass would do just aswell.

Lemon cous cous cake

Now here is a strange cake and is an acquired taste but when you just need something to go with a cup of tea….. this does the job and is sin free on a green slimming world day.

juice from 2 lemons

canderal to taste

3 eggs.

Place cous cous in a bowl with lemon juice.

cover with boiling water and allow to soak for a few minutes.

separate the eggs and stir in the yolks.

whisk the whites and fold into mixture.

pour into loaf or cake tin and bake for aprox 30 min’s at 180c.

One for the girls to try at work today 🙂

Just hope I can stop the boys from eating all the biscotti biscuits and keep them nice and crunchy for the weekend 🙂

Apple Betty Pudding..

As I am stickling quite strictly to my slimming world eating plan and feeling so much better for it already ,I decided tonight’s pudding had to be a slimming world one.

I thought I would try a new recipe recommended by a friend……

12 oz eating apples

2oz sultanas

8 eggs

sweetener to taste

2tsp vanilla essence

pot of vanilla Muller light yogurt

pinch of cinnamon.

1.  Peel core and slice the apple, place into a shallow dish and sprinkle with sultanas.

2.  Beet the eggs with the sweetener and vanilla essence, then add the yogurt and beat again.

3.  pour mixture over the apple and sultanas ,allow the mixture to sink then sprinkle with the cinnamon.

Bake for 30 min’s or until set at 190 c or gas mark 5.

It was delicious and only 4 sins per quarter of serving so I got my nice pudding with out upsetting my eating plan 🙂
