Practice run….

While I am waiting to find the time to make this years Jam, I thought I would make some Lemon curd.

You only make this in a small quantity as it only keeps well for a month,although this will be lucky to last the week.

Its so easy to make,anyone could do it, you will need…

4 eggs

juice from 4 lemons

4oz butter

12oz caster sugar

Place all ingredients into a bowl, stand it over a pan of simmering water.

Stir until the sugar has dissolved and then continue heating and stirring until the curd thickens. (between 20 and 30 mins )

Strain the cooked curd through a fine sieve before putting into jars

A tip……  beat the eggs before adding to the bowl

    Ooh – that looks scrummy. I love home-made lemon curd. The shop-bought one tends to taste a bit plasticy. Is there such a word as plasticy? Oh well, there is now :).

    cherrypie … it keeps for a month or 3 month in the fridge.

    Ellee… I think this is the perfect recipe, not too sweet and still tart from the lemon too.

    Geoff a jar is for your house so you will get to see what it tastes like . 🙂

    That’s all you need to do?? sounds easy! I had thought it would be much more of a palaver..
